Fresh Baked Cookies - Even for the Busiest Parents

What a lot of busy parents don't realize, or just forget, is that baking from scratch can actually be really quick! And, with a little prep work, it's even faster than using store bought cookie dough- and definitely healthier and tastier.

I've been busy digging up old favorites that are great for making and storing. The following 2 cookie recipes are perfect for just that and only take about 10 minutes!

Storing Cookie Dough:

Mix up some cookies with your mini-chef.

Bake however many cookies you'd like to have right away and, using the remaining cookie dough, drop rounded spoonfuls on to a baking sheet and freeze for a while.

Transfer frozen cookie balls into an air-tight container labeled with name, batch date, oven temperature, and baking time. Frozen cookies will take an extra minute or two of baking time.

Now you have fresh cookies in an instant for surprise company, impromptu tea parties, or for grabbing on the way to a friend's house!

Coconut Chocolate Chip Cookies (Makes about 72 cookies)

What you need:

2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter
1 cup white sugar
1/2 cup light brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups semisweet chocolate chips
2 cups flaked coconut

What to do:

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Combine the flour, baking soda and salt. Set aside.
  3. In a large bowl, cream together the butter, brown sugar and white sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
  4. Gradually beat in the flour mixture.
  5. Fold in chocolate chips and coconut.
  6. Drop by rounded spoonfuls onto cookie sheets.
  7. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

White Chocolate Chip Cocoa Cookies (about 60 cookies)

What you need:

1 cup (2 sticks) butter, softened
1 cup granulated sugar
3/4 cup packed light brown sugar
2 teaspoons vanilla extract
1/2 teaspoon salt
2 eggs
2 cups all-purpose flour
1/2 cup cocoa
1 teaspoon baking soda
2 cups white chocolate chips

What to do:

  1. Heat oven to 375°F.
  2. Beat butter, granulated sugar, brown sugar, vanilla and salt in large bowl until creamy. Add eggs; beat well.
  3. Stir together flour, cocoa and baking soda; gradually add to butter mixture, beating until well blended. Stir in chocolate chips and drop by rounded teaspoons onto un-greased cookie sheet.
  4. Bake 8 to 10 minutes or until set. Cool slightly; remove from cookie sheet to wire rack. Cool completely.
