Peppermint Eggnog

 

 

6 large eggs
2 large egg yolks
1/2 cup sugar
2 tablespoons sugar
1/4 teaspoon salt
3/4 teaspoon pure peppermint extract
1 tablespoon pure vanilla extract
4 cups whole milk
15 peppermint candy canes, broken into pieces
1/2 cup heavy cream
Peppermint sticks, for decoration


Directions

Whisk together eggs, egg yolk, sugar, salt and the extracts in a large saucepan over medium-low heat until combined.  Add milk, whisking until mixed fully.  Cook on medium, whisking constantly until mixture registers 160 degrees or is thick enough to coat the back of a spoon, usually about 30 minutes. Pour milk mixture through strainers into a bowl. Set bowl in ice-water bath letting cool completely. Transfer to an airtight container, and refrigerate at least 4 hours or up to overnight.
Crush Candy Canes. Sift in strainer to get rid of dust and put in to a dish.


Melt chocolate in bowl. Dip rim of each cup into melted chocolate, then crushed peppermint, refrigerate until set.


Put cream into the bowl and whip on medium speed until stiff peaks form. Fold in custard and combine.

 
Fill cups with eggnog, sprinkle with crushed peppermint, and garnish with peppermint sticks.

 

Great Great Grandma Mae's Butterscotch Squares

 

For me, it doesn't feel like the Holiday season until mad baking is underway in my kitchen, complete with flour over every single appliance! At this time of year, I'm always on the hunt for a new cookie or square recipe and this year, my friend Melissa, fellow Macaroni Kid Publisher from Clermont, FL shared her great great grandma's recipe! What could be better? Holidays + baking + great great grandma's recipe = delicious goodness!

 

I think this is as original as it gets.  It's from my grandmother's recipe box.  The recipe was written on it's original card ... all browned and stained from the wear and tear over the many years iof being passed down in my family!  A very simple recipe, but yummy.  Very similar to a "blondie".

 

1 stick of butter
2 cups of brown sugar
2 eggs
1/2 cup pecans (optional)
2 cups flour
1/2 tsp salt
2 tsp baking powder
2 tsp vanilla extract
 
Preheat oven to 375 degrees.  Grease an 8x8x2 pan or spray w/ cooking spray.  Melt butter, add sugar.  Blend well by hand (I use a mixer and it worked fine).  Add other ingredients and blend.  Mixture will be very thick.  Put in pan and bake 30-40 minutes.
