Mini Baked Corn Dogs

Just in time for National Corn Dog Day, April 19, 2011!

 

1 pkg mini hot dogs or turkey dogs
2 boxes corn muffin mix (8.5 oz size)
mini muffin pans
cooking spray
ketchup & mustard for dipping


Preheat oven to 350 degrees and spray muffin pan with cooking spray. Prepare cornbread mix according to package instructions in a medium size bowl. Pour batter into the mini muffin tins - about half full. Gently place a mini hot dog on top of the batter in the center of each muffin cup. You can press the hot dog down just slightly. Bake for approximately 8 minutes. Remove from oven and allow to sit five minutes. Remove mini corn dogs from pan and serve with favorite dipping sauces.
